If like me, you like to eat smaller and more frequent meals throughout the day, these topped ricecakes are perfect for you. I love using Quark, it makes a great substitute for mayonnaise!
3 Ricecakes (Unsalted or lightly salted)
Tin of tuna in springwater
3 Cherry tomatoes
In a small bowl, add the quark, seasoning (I just used salt and pepper) with the tuna and mix well. Divide the mix onto the ricakes, sprinkle the feta on top and finish with tomatoes.

Top tip! Try adding some mashed avocado in the mixture to make it even creamier
