The perfect protein pancake

As it's close to Pancake Day, I thought I'd share with you my simple, delicious but healthier alternative to the classic sugar and lemon pancake. Once you've made the 'batter', you can add any toppings you like! Here's the recipe....


1 scoop MyProtein whey (I used salted caramel flavour)

1/2 ripe banana

2tbsp unsweetened almond milk

1/4 cup egg whites


MyProtein Flavdrops

1/2 tbsp coconut oil

In a bowl, mash the banana and add the almond milk and egg whites. Stir in the protein powder and mix well to make the batter, checking there are no lumpy bits. Add the cinnamon and flavdrops to sweeten. Heat a pan on a medium temperature and add the coconut oil to it. Spoon in 2 tablespoons of the batter to the pan at a time to make one pancake. When the pancake starts to bubble, flip it over! The mixture should make 5 depending on how generous your spoons are.

For the toppings, I added blueberries and banana with a little sugar free caramel sauce.
