Protein Pumpkin Cookies

It wouldn't feel like Autumn without a pumpkin recipe! As these cookies contain don't contain oats and have a nut butter substitute (powder) they make for a VERY low carb and fat alternative to even regular 'healthy' treats! Give them a whirl....

Ingredients:

2 Scoops PEScience Peanut Butter Cup Select Protein

100g Pumpkin Puree

20g Chia Seeds

20g Powdered Peanut Butter (I ordered this from Bodybuilding.com)

50g Egg Whites

1/2 Tsp Baking Powder

1 Tsp Cinnamon Powder

Flavdrops/ Sweetener/ Stevia

As it was Halloween and I was carving a pumpkin, I cut the pumpkin into chunks and baked on a medium temperature in the oven for 20 minutes until soft. I mashed the pumpkin to make the puree for the mixture. (Alternatively, you could used canned pumpkin)

Add all the ingredients together in a large bowl, mix well after each one. Finally stir in the protein powder and carefully decant onto a baking tray lined with parchment paper. Put tray in the oven to bake for around 10 minutes (med temp)

After removing the tray, leave to cool for a few minutes.

I made the mistake of thinking mixed fruit cookie cutters were a good idea! I now know they are not! Try using a regular shaped cookie cutter or just simply cut them into rustic chunks.
