There's so many protein pancake recipes out there online. I can assure you though, you can't go wrong with this easy, peasy, speedy recipe! Here's how to make the batter for 3 fluffy pancakes...
1 scoop PEScience White Chocolate Mint Select Protein
70g Egg Whites
10g Coconut flour
40g Unsweetened Almond Milk
1/2 Tsp Baking Powder
1/2 Tsp Truvia
1/2 Tsp Cinnamon
In a bowl, add the dry ingredients and slowly mix in the wet, stirring well as you go. The consistency of the batter should be quite thick.
In a small frying pan, add spray light oil (I used 3 pumps of the coconut oil spray light) and turn the hob on to a medium temperature. When the pan is hot, carefully add around a third of the batter to the middle of the pan and use a spoon in a circular motion to form a pancake.
Leave this cooking until bubbles start tp appear. When this happens, carefully flip it! Repeat the process with the rest of the mixture.
