Hey lovelies, I made these chocolate peanut butter muffins a few days ago but didn't take a picture of them until now! (Excuse that they look very dry on the outside haha- I promise they taste so yum) I've just eaten one with a coffee as a mid morning snack- perfect!
RECIPE:
2 tbsp peanut butter
1 banana
4 tbsp egg whites
2 tbsp 0% Greek yogurt
1 tsp baking powder
3 tbsp honey
6 tbsp Ultra fine oats/oat flour
2 tbsp cocoa powder
3 tbsp oat milk
1 tbsp vanilla vegan protein powder
3 tbsp cacao nibs
Mix the wet ingredients in a bowl well before adding the dry. Use a muffin tin/ cases and pop in the oven to bake on 180 degrees for around 12 minutes.
Makes 6 muffins, enjoy!
