Blueberry 'macro' muffins...

I'm in competition prep at the moment so I can't go wild with loads of different ingredients. I call these beauties my 'macro' muffins because I had to use exact measurements to make them in order to fit my daily macros. I'm ok with the fact they will never win the most attractive award, because taste is ultimately what matters the most. 

These muffins take no more than 15 minutes to make from start to finish..... Here's how!


60g oats

1 scoop Myprotein Salted Caramel whey

4 tsp coconut flour

50g egg whites

50g unsweetened almond milk

50g blueberries

Cinnamon powder & Myprotein flavdrops

Pre heat the oven on a medium temperature. Using coconut oil, grease 5 muffin cases (I used a muffin tray) In a food processor, simply add all the ingredients except the blueberries and mix until smooth. Add the blueberries and stir into mixture. Divide the mixture into the muffin tray/cases. Bake for 10 minutes.... Enjoy!

Top tip: I love to cut the freshly baked muffins up and add them to greek yogurt. 

Total macros: 37P/ 46C/ 7F/ 414 calories
