If you've not heard of the wonder that is egg white 'pizza', this will blow your mind! The base is essentially an omelette with added toppings to make it pizza like. You can be really experimental with your toppings, but here's how I made mine...
- 1/2 cup egg whites
- 1tbsp gluten free pizza topping (I got it from Tesco)
- 1 handful spinach
- 40g feta
- 100g king prawns
- 6 cherry tomatoes
- 1/4 red pepper
- 1/4 medium avocado
- 1/2 tsp coconut oil
In a pan, add the coconut oil and egg whites on a medium heat, leave for a couple of minutes until the whites start to set. In a low oven, put the pan into the oven for 2 minutes until the whites are completely set. Spread the pizza topping liberally over the base.
Now it's time to go cra-zy with the toppings!
Add all the rest of the ingredients to the base except the avocado. Turn the oven up to a medium heat and place the pan back in and cook for another 10 minutes, or until the prawns are cooked and cheese has melted.
Carefully remove the 'pizza' from the pan, add the avo and enjoy!
