My delicious protein biscuits have the texture of shortbread and are filled with a gooey chocolate centre. Enjoy these anytime for a winning 'diet friendly' sweet treat!
Ingredients: (Makes 9 Biscuits)
1 1/2 Scoops PEScience Snickadoodle Select Protein
80g Coconut Flour
1/2 Tsp Baking Powder
200g Coconut/ Almond Milk
150g Egg Whites
50g Greek Yogurt
1 Tsp Truvia/ Stevia
1 Tsp Cinnamon Powder
50g Dark Chocolate chips
Pre heat an oven to a medium temperature and line a tray with baking paper. Add all the dry ingredients into a bowl first, then carefully start to mix in the milk, whites and yogurt, making sure you stir the mixture well after each one. (Don't add the chocolate chips at this stage.)
The mixture should be quite a 'doughy' consistency, so using your hands, start rolling into 9 golf sized balls and place each one on the baking tray. Push each ball down so it is flat and add a sprinkling of chocolate chips in the centre of each one.
Now with the rest of the mixture (you should have half left) Repeat the process of rolling into a ball, flatten, and place on top to create a second layer so the biscuits are now a 'sandwich'. Add the rest of the chocolate chips on top of each one, sprinkle with cinnamon and truvia and bake for around 15 minutes until cooked through.
Leave for 10 minutes to cool, serve and enjoy!
